Preparation & Storage

Preparation

For Espagnole (or brown) Sauce: Combine 1 lb (container) Prep and 1 1/2 qt lukewarm water with a wire whip to blend.  Stir in 2 qt hot water. Bring to a boil over medium heat, stirring constantly. Boil and stir 1 minute. Yields 1 gallon.

For a smaller measure, follow directions above and change amounts to:

3 Tbsp Sauce Prep + 3/4 cup lukewarm water + 1 cup hot water. Yields 2 cups.

3/4 cup (8 oz) Sauce Prep + 3 cups lukewarm water + 1 quart hot water. Yields 2 quarts.

For Demi-glace (or Madeira brown) Sauce Variation:  To yield 1 gallon, follow directions above and substitute 2 qt hot water with 1 3/4 qt hot water and 1 cup Madeira wine.
