Preparation & Storage

Preparation

Stir Dry Roux before measuring to assure a uniform mixture. Blend DRY ROUX and COOL WATER with a wire whip until smooth (slurry). Add slurry to HOT STOCK* stirring well. Bring to boil over medium heat, stirring constantly until thickened.

1 oz (3-1/2 Tbsp) DRY ROUX + 1/2 cup Cool Water + 1-1/2 cups Hot Stock = Yields 2 cups

4 oz (1 cup) DRY ROUX + 2 cups Cool Water + 1-1/2 quarts Hot Stock = Yields 2 quarts

8 oz (2 cups) DRY ROUX + 1 quart Cool Water + 3 quarts Hot Stock = Yields 1 gallon.

When used for thickening, 1 oz. Dry Roux replaces 2 Tbsp. cornstarch or 1/4 cup all-purpose flour.

*Hot stock may be broth made from Minor's BASE or milk or cream.

For food safety and quality, follow cooking instructions. Cook product to an internal temperature of 165° F. Not processed to control microbiological hazards.
