Awesome Empanadas with Sweet Earth® Awesome Grounds
With a flakey crust that’s filled to the brim with Awesome Grounds, minced onions, zesty herbs and spices and diced veggies, these empanadas will keep your guests coming back for more.
Ingredients

Neutral oil -- 1 Tbsp

Sweet Earth Awesome Grounds -- 1 lb.

White onion, minced -- ½ ea.

Carrot, minced -- 1 ea
-
Celery rib, minced -- 1 ea
-
Russet potato, peeled, ¼” dice, cooked -- 1 ea

Garlic cloves, minced -- 2 ea
-
Chili powder -- 1/4 tsp

Cumin, ground -- ¼ tsp
-
Vegetable broth -- ½ cup

Eggs, whisked -- 2 ea
-
Empanada dough discs -- 20 ea
Preparation

1Pre-heat oven to 375°.

2In medium rondeau over medium heat, add the oil and heat until it shimmers.

3Add grounds, onion, carrot, and celery. Cook until grounds are browned. Add potatoes.

4Add garlic, chili powder and cumin and cook for about 1 minute, until spices are fragrant.

5Add broth and cook until most of the liquid has been absorbed, about 5 minutes. Season with salt and black pepper. Set mixture aside to cool.

6Fill empanada dough and seal edges with egg wash. Transfer to a parchment paper lined sheet pan and brush top surface with egg wash.

7Bake until golden brown.
Tips:
It’s important not to over-fill the empanada. When sealing the edges, an easy way to make sure the edge seals well is to use the prongs on a fork and gently press down just to seal the doughs together.
