Stouffer's Ready-to-Eat Smoky Black Beans, cooked10.5 oz
Tomatoes, small dice3 oz
Corn, roasted9 oz
Red onion, medium diced3.25 oz
Cilantro, chopped0.25 oz
Minor's Fire Roasted Jalapeño Flavor Concentrate Gluten Free 6 x 13.6 ounces1.5 oz
Red wine vinegar, 1/2 cup4 fl.oz
Olive oil, 1/2 cup4 fl.oz
Scallions, cut on a bias1 oz

 

Method

  1. In a mixing bowl, combine the beans, tomatoes, corn, onions, cilantro and mix thoroughly.
  2. In a second mixing bowl, thoroughly combine the Fire Roasted Jalapeno Flavor Concentrate, vinegar and oil.
  3. Add the jalapeno/oil/vinegar mixture to the black bean and corn mix. Mix thoroughly.
  4. Fold in Scallionss and refrigerate until service.
