Coconut Butter Mochi Cake

  • Butter, melted -- ½ cup
  • Sugar, granulated -- 2 cups
  • Eggs, large -- 4 ea
  • Mochiko Flour -- 16 oz
  • Baking Powder -- 2 tsp
  • Coconut Milk -- 12 fl oz
  • Evaporated Milk -- 5 fl oz
  • Coffee mate Coconut Creme -- 14 ea
Preparation

Preheat oven to 350°F and grease desired baking vessel

Combine butter and sugar together. Then add one egg at a time.

Mix in mochiko flour and baking powder until almost uniform.

Whisk in coconut milk, evaporated milk, and Coffee mate coconut crème until uniform.

Pour into greased baking vessel and bake for 1 hour.

Remove and let cool before cutting for service.
