Coconut Butter Mochi Cake
Ingredients

Butter, melted -- ½ cup

Sugar, granulated -- 2 cups

Eggs, large -- 4 ea

Mochiko Flour -- 16 oz

Baking Powder -- 2 tsp

Coconut Milk -- 12 fl oz

Evaporated Milk -- 5 fl oz
-
Coffee mate Coconut Creme -- 14 ea
Preparation

1Preheat oven to 350°F and grease desired baking vessel

2Combine butter and sugar together. Then add one egg at a time.

3Mix in mochiko flour and baking powder until almost uniform.

4Whisk in coconut milk, evaporated milk, and Coffee mate coconut crème until uniform.

5Pour into greased baking vessel and bake for 1 hour.

6Remove and let cool before cutting for service.
