Curried Cauli-fredo

Vegetable oilTbsp
Mustard seed, yellow1/2 tsp
White onion, 1/4" dice3 oz
Potato, 1/4" dice3 oz
Golden raisins1/4 cup

Sliced almonds

1/4 cup

Cilantro stems

1 tsp

Cauliflower, 1/4" florets

1/2 cup
Yellow curry paste, prepared2 Tbsp
Water1 cup

Stouffer's Cauliflower Alfredo

2 1/2 cup

Rice, cooked

5 cup
Cilantro leaves, chiffonade2 Tbsp



  1. In a medium saucepan over medium-high heat, add oil and mustard seeds. Once the mustard seeds begin to pop, about 45 seconds, add onion, potato, and raisins to the pan. Continuously stir and cook for 2-3 minutes.
  2. Add sliced almonds, cilantro stems, and cauliflower to the pan. Stir and continue to cook for an additional 2 minutes.
  3. Add curry paste and water. Bring to a light simmer.
  4. Add cauliflower alfredo, and season with salt and pepper. Serve immediately over rice, garnished with chiffonade cilantro leaves.
