Meatball Sub with Sweet Earth® Awesome Grounds

Deliciously tender meatballs flanked by toasted bread and covered with your favorite marinara sauce and plant-based cheese.
Ingredients
  • Sweet Earth® Awesome Grounds -- 8 oz
  • Almond flour with Italian seasoning -- 1/4 cup
  • White onion, minced -- 1 Tbsp
  • Garlic, minced -- 2 tsp
  • Parsley, minced -- 2 tsp
  • Marinara, prepared -- 1/2 cup
  • Vegan sub roll -- 1 ea
  • Plant-based Provolone cheese -- 2 slices
Preparation

    In a medium bowl, mix Sweet Earth® Awesome Grounds, almond flour, onion, garlic, and parsley. Season with salt and black pepper. Form into balls.

    In a small sauce pot, bring marinara to a simmer.

    Meanwhile, roast meatballs in a 400°F oven until golden brown.

    Remove pan from the oven and transfer meatballs to the pot of marinara; simmer for 10–12 minutes, until cooked through.

    Cut the sub roll in half lengthwise and cover with a layer of marinara. Add meatballs, Provolone slices and some more parsley.
