Meatball Sub with Sweet Earth® Awesome Grounds
Deliciously tender meatballs flanked by toasted bread and covered with your favorite marinara sauce and plant-based cheese.
Ingredients

Sweet Earth® Awesome Grounds -- 8 oz

Almond flour with Italian seasoning -- 1/4 cup

White onion, minced -- 1 Tbsp

Garlic, minced -- 2 tsp

Parsley, minced -- 2 tsp
-
Marinara, prepared -- 1/2 cup
-
Vegan sub roll -- 1 ea
-
Plant-based Provolone cheese -- 2 slices
Preparation

1In a medium bowl, mix Sweet Earth® Awesome Grounds, almond flour, onion, garlic, and parsley. Season with salt and black pepper. Form into balls.

2In a small sauce pot, bring marinara to a simmer.

3Meanwhile, roast meatballs in a 400°F oven until golden brown.

4Remove pan from the oven and transfer meatballs to the pot of marinara; simmer for 10–12 minutes, until cooked through.

5Cut the sub roll in half lengthwise and cover with a layer of marinara. Add meatballs, Provolone slices and some more parsley.
