Mindful Chik’n Noodle Soup with Sweet Earth® Mindful Chik’n

They say chicken noodle soup warms the soul. This chik’n noodle soup does just that. Give your customers spoonful after spoonful of warm vegetable broth, Mindful Chik’n, tasty veggies, garlic and a hint of lemon.
Ingredients
  • Coconut oil -- 2 Tbsp.
  • White onion, diced -- 1 ea
  • Carrot, peeled, diced -- 2 ea
  • Celery stalks, diced -- 2 ea
  • Garlic cloves, minced -- 3 ea
  • Vegetable stocks -- 8 cups
  • Sweet Earth Mindful Chik’n -- 2 ½ lbs
  • Egg noodles -- 2 1/2 cups
  • Parsley, minced -- 2 Tbsp
  • Lemon juice -- 2 Tbsp
Preparation

    In a stock pot over medium heat, add coconut oil, white onion, carrot, and celery. Let mirepoix sweat until onions are translucent and fragrant, about 4-5 minutes, stirring frequently.

    Add the garlic and continue to cook for another minute.

    Whisk in the vegetable stock and bring to a simmer.

    Add the egg noodles and cook until tender.

    Stir in the chik’n and cook for 5 minutes.

    Remove pot from the heat and finish with parsley and lemon juice.
Tips:

For a more of a “pulled chicken” texture, add the chicken to a kitchen aid bowl with the paddle attachment. Turn the machine on 4-6 speed and run mixer until the chicken has achieved desired look.
