Spicy Corn Fritters with Sweet Thai Chili Ginger Sauce

Thai Sweet Chili Sauce, 1/2 cup4 fl.oz
Maggi Spicy Seasoning 6 x 400 ml, 1 tsp.0.25 fl.oz
Cilantro, chopped2 tsp
Ginger, minced1 tsp
Eggs, 2 each4 oz
Maggi Spicy Seasoning 6 x 400 ml, 4 tsp.0.75 fl.oz
Maggi Thai Style Red Curry Paste 6 x 14.4 ounces, 1 tbsp.0.75 oz
Water, 2 tsp.0.25 fl.oz
Rice flour, white, 1-1/2 cups3 oz
Granulated sugar, 1 tbsp.0.25 oz
Baking powder, double acting1 tsp
Black pepper, ground0.5 tsp
Corn, kernels, fresh or frozen, 2 cups9 oz
Green bean, thinly sliced, 1 cup4 lb
Scallions, chopped, 1/2 cup1 oz

Method

  1. To make a dipping sauce, whisk the Thai sweet chili sauce, Spicy Seasoning, cilantro, and ginger together until smooth. Set aside.
  2. Whisk together the eggs, Spicy Seasoning, red curry paste and water until smooth. Whisk in rice, sugar, baking powder and black pepper to make a thick batter.
  3. Fold in the corn, beans and scallions until they are all well coated. Allow mixture to cool, about 1 hour, or overnight if possible.
  4. Preheat deep fryer to 300-375°F. Mix fritter batter well before frying each batch. Gently spoon mixture into hot oil using about 1 Tbsp. per fritter. Deep fry until a dark golden brown, approximately 3 minutes.
  5. Drain on absorbent paper. Serve with dipping sauce.
