Ingredients

Spinach, fresh, 20 cups25 oz
Walnuts, halved, 2-1/2 cups10 oz
Cheese, parmesan, shredded, 2-1/2 cups7 oz
Minor's Roasted Mirepoix Flavor Concentrate Gluten Free 6 x 1 pound, 4 tbsp.3 oz
Garlic, cloves, fresh, 5 each0.5 oz
Olive oil, 1-1/4 cup10 fl.oz
Table salt, to taste2 g
Cream cheese, 5 cups40 oz

Method

  1. In a food processor combine spinach, walnuts, Parmesan cheese, Roasted Mirepoix Flavor Concentrate, and garlic cloves. Pulse until walnuts are roughly chopped.
  2. Slowly stream in olive oil until pesto comes together. Add salt to taste.
  3. Combine pesto mixture with cream cheese. Chill and hold in refrigerator for service.
