Veggie Chili with Sweet Earth® Awesome Grounds

Strike the perfect balance of ever-so-sweet and slightly spicy with this vegan chili combing the finest blend of herbs and spices with beans, Sweet Earth® Awesome Grounds, scallions, cilantro and thinly sliced jalapeños to have your customers forever craving more.
  • Neutral oil -- 2 Tbsp
  • White onion, ¼” dice -- 1 ea
  • Garlic, minced -- 2 Tbsp
  • Sweet Earth Awesome Grounds -- 2 lbs
  • Black beans, drained and rinsed -- 4 oz
  • Red kidney beans, drained and rinsed -- 4 oz
  • All-purpose flour -- 2 Tbsp
  • Chili spice mix -- 1 Tbsp
  • Crushed tomatoes -- 16 oz
  • Vegetable broth -- 16 oz
  • Scallions, thinly sliced -- ¼ cup
  • Cilantro, chiffonade -- ¼ cup
  • Jalapenos, sliced thinly into rings -- ¼ cup

    In a medium sauce pan over medium high heat, add oil, onions, garlic, grounds, and black beans. Cook for 3-5 minutes, stirring frequently, until the onions are aromatic and translucent.

    Add flour and spice mix; fold ingredients together until flour coats all the ingredients.

    Add broth and tomatoes; bring to a simmer. Cook chili until the starchiness of the flour is cooked out.

    Season with salt and black pepper and transfer to containers and serve with scallion, cilantro, jalapeno, and white onion.

Using a whisk is a great tool to break up the grounds into even sized pieces throughout the cooking process. This recipe is also great with Mindful Chik’n – I would recommend pre-searing the Chik’n with the spices to develop additional and deeper flavor.
