Classic Tomato Bisque
Ingredients

Margarine, or butter -- 0.75 cup

All purpose flour -- 1.3 cup

Water, hot -- 3.5 qt

Minor's Chicken Base 12 x 1 pound -- 3 oz

Tomatoes, canned with juice, small dice -- 14.5 oz

Tomato paste -- 1.3 cup

Granulated sugar -- 5 tbsp

Salt -- 2 tsp

Cream, heavy whipping -- 8.5 oz
Preparation

1In an 8 qt. sauce pot, melt margarine or butter. Blend in flour. Cook 2-3 minutes, stirring constantly.

2Add water, Chicken Base, tomatoes, tomato paste, sugar and salt. Heat to boiling, stirring constantly. Reduce heat and gently boil 2 minutes, stirring occasionally.

3Add cream, mixing well. Heat to a gentle boil, stirring frequently.
