Queso Fundido Tacos
Chorizo is mixed with CHEF-MATE® ¡Que Bueno! White Queso Sauce, baked, and spooned onto flour tortilla tacos. The tacos are then topped with pickled red onion, small diced white onion, Pico, cilantro, and sour cream for a fun(dido) dish.
Ingredients

QUESO FUNDIDO:

Chorizo, raw, casing removed -- 2 lbs

Chef-mate Que-Bueno White Queso -- 6 cups

ASSEMBLY:

Flour tortillas, 6 inch, warmed -- 24 each

Radishes, fresh, sliced -- 1 bunch

Onion, white, small diced -- 1 ½ cups

Cilantro, fresh, chiffonade -- 1 cup

Limes, cut into small wedges -- 24 wedges
Preparation

1For the Queso Fundido: Preheat oven to 350°F. Heat a 12-inch cast iron skillet over medium-high heat.

2Once hot, add the chorizo. Cook, breaking up into small pieces, until browned and cooked through. Drain excess fat.

3Pour in white queso and stir to combine.

4Bake until bubbly, about 15-20 minutes.

5For assembly: Serve queso with tortillas, radishes, onions, cilantro, and lime wedges. Spoon queso into the center of the flour tortilla and top with the desired garnishes.
