Breakfast Nachos

Tortilla chips, prepared -- 30 oz

Eggs, scrambled, 2-1/2 qt. -- 45 oz

Black beans, cooked, warmed, 1-1/4 qt. -- 35 oz

Chef-mate Country Sausage Gravy 6 x 105 ounces, warmed, 1-1/4 qt. -- 40 oz

Cheddar cheese, shredded, 2-1/4 qt. -- 30 oz

Chili pepper, Jalapeño, sliced, 10 tbsp. -- 2.5 oz

Tomatoes, Cherry, quartered, 2-1/2 cups -- 20 oz

Onions, raw, small diced, 2-1/2 cups -- 7.5 oz

Scallions, sliced, 10 tbsp. -- 2.5 oz

Avocado, sliced, 2-1/2 each -- 10 oz
Preparation

1Pre-heat oven to 350°F.

2Place tortilla chips on oven-safe platter/skillet. Top with scrambled eggs, Chef-mate Country Sausage Gravy, shredded Cheddar, and warmed black beans.

3Place in pre-heated oven to warm and melt cheddar cheese.

4Remove from oven when done and top with scallions, jalapenos, tomatoes, onions and avocado.
