Cipollini Onions

Ingredients
  • Pearl onions, Cipollini, cleaned, whole, blanched -- 10 lb
  • Vegetable oil -- 0.5 cup
  • Red wine, reduced by half -- 0.5 cup
  • Garlic, dried, minced -- 0.25 cup
  • Minor's Beef Demi Glace Gluten Free 4 x 5 pounds (Pouch), thawed -- 1 pouch

    Add oil to pre-heated pan. Sauté onions until caramelized.

    Add garlic and sweat for 2 minutes. Deglaze with red wine. Add Demi Glace and bring to a simmer.

    Simmer for 10-15 minutes or until onions are cooked through. Serve hot.
