Corn, Bacon, Scallions and Coconut

  • Bacon, chopped, 1 cup -- 8 oz
  • Scallions, chopped, 1/2 cup -- 1.25 oz
  • Garlic, minced, 2 tsp. -- 0.5 oz
  • Black pepper, ground -- 2 tsp
  • Corn, kernels, fresh or defrosted-frozen, 4 cups -- 16 oz
  • Maggi Seasoning, 2 tbsp. -- 1 fl.oz
  • Coconut flesh, dried and toasted, shredded, 1/2 cup -- 1 oz
Preparation

In a sauté pan or wok over medium heat, cook bacon by stirring often until it begins to brown slightly and some fat renders. (Optional: remove some of fat)

Add scallions, garlic, and pepper and cook until aromatic, approximately 15 seconds.

Add corn and Maggi Seasoning. Cook, stirring constantly, until corn is tender.

Taste and adjust seasoning with Maggi Seasoning. Transfer to serving dish and top with toasted coconut.
