Corn, Bacon, Scallions and Coconut

Bacon, chopped, 1 cup8 oz
Scallions, chopped, 1/2 cup1.25 oz
Garlic, minced, 2 tsp.0.5 oz
Black pepper, ground2 tsp
Corn, kernels, fresh or defrosted-frozen, 4 cups16 oz
Maggi Seasoning, 2 tbsp.1 fl.oz
Coconut flesh, dried and toasted, shredded, 1/2 cup1 oz



  1. In a sauté pan or wok over medium heat, cook bacon by stirring often until it begins to brown slightly and some fat renders. (Optional: remove some of fat)
  2. Add scallions, garlic, and pepper and cook until aromatic, approximately 15 seconds.
  3. Add corn and Maggi Seasoning. Cook, stirring constantly, until corn is tender.
  4. Taste and adjust seasoning with Maggi Seasoning. Transfer to serving dish and top with toasted coconut.
