Country Casserole

  • Biscuits, plain or buttermilk - prepared, 7-1/2 cups -- 20 oz
  • Eggs, scrambled, 10 each -- 16 oz
  • Red bell peppers, small diced, 3/4 cup -- 5 oz
  • Red onion, small diced, 3/4 cup -- 5 oz
  • Chef-mate Country Sausage Gravy 6 x 105 ounces, warmed, 2 cups -- 16 oz
  • Cheddar cheese, shredded, 3/4 cup -- 5 oz

Pre-heat oven to 350°F.

Sauté bell pepper with a small amount of vegetable oil before adding to casserole.

In ramekin/small serving dish, place crumbled biscuits and top with scrambled eggs, sautéed pepper, onion, Country Sausage Gravy, and cheddar cheese.

Place in oven until warmed and cheese is melted.

Garnish with chopped parsley.
