Country Sausage Quiche
Ingredients

Scallions, fresh, sliced -- 8 ea

Spinach, chopped, frozen, thawed, optional -- 1 cup

Cheddar, sharp, shredded -- 2 cup

Eggs, beaten -- 12 ea

Chef-mate Country Sausage Gravy -- 2 cups

Salt To taste, to taste

Pepper -- to taste

Pie crust, prepared, 9-inch, deep dish -- 2 ea
Preparation

1Preheat oven to 325°F.

2In a medium bowl, whisk together the scallions, spinach, cheddar, eggs, and gravy. Season with salt and pepper.

3Divide into two prepared pie crusts.

4Place in center of oven and bake until cooked through and golden on top, about 40-50 minutes.

5Allow quiches to cool 15 minutes before serving.

6Cut each quiche into 5 portions.
