Cucumber Relish

  • Granulated sugar, 1/4 cup -- 2 oz
  • Water, 1/4 cup -- 2 fl.oz
  • Ginger root, raw, minced, 2 tsp. -- 0.5 oz
  • Maggi Seasoning, 1 tbsp. -- 0.5 fl.oz
  • Rice vinegar, 1/4 cup -- 2 fl.oz
  • Cucumber, bite size slices, 3 cups -- 10 oz
  • Carrot, grated or fine julienne, 1/4 cup -- 1 oz
  • Shallot, sliced thinly, 1 each -- 1.5 oz
Preparation

Combine sugar, water and ginger in a saucepan. Bring to a boil. Whisk to ensure all sugar has dissolved.

Transfer to mixing bowl. Add Maggi Seasoning and vinegar and whisk well.

Toss dressing with the cucumbers, carrots and shallots.
