Harvest Salad with Pumpkin Vinaigrette

Pistachios, whole shelled, toasted1/4 cup
Mixed greens4 cups
Ancient grain of choice, cooked1/4 cup
Dried cherries1/4 cup
Blue cheese crumbles1/4 cup
Pumpkin Vinaigrette 
Libby's 100% Pure Pumpkin1 cup
Apple cider vinegar1 cup
Olive oil1 cup
Maple syrup1/2 cup
Onion, red, small dice1/2 cup
Garlic, minced1 Tbsp
Ginger, minced1 Tbsp
Kosher salt2 tsp




  1. Toast pistachios and set aside.
  2. In a mixing bowl, combine all ingredients and dress.
  3. Toss and serve immediately.

Pumpkin Vinaigrette

  1. In a small sauté pan, cook pumpkin, onion, garlic, ginger and salt until pumpkin is fragrant.
  2. Add sautéed mixture to a blender. Add vinegar and maple syrup.
  3. Blend and slowly add oil until dressing comes together. Chill for service.
