Harvest Salad with Pumpkin Vinaigrette

Pumpkin Vinaigrette 
Libby’s® 100% Pure Pumpkin1 cup
Onions, red, small dice1/2 cup
Garlic, minced1 Tbsp
Ginger, minced1 Tbsp
Kosher salt2 tsp
Apple cider vinegar1 cup
Maple syrup1/2 cup
Olive oil1 cup
Pistachios, whole, shelled, toasted1/4 cup
Mixed greens4 cups
Ancient grain of choice, cooked1/4 cup
Dried cherries1/4 cup
Blue cheese crumbles1/4 cup



Pumpkin Vinaigrette

  1. In a small sauté pan, cook pumpkin, onions, garlic, ginger, and salt until pumpkin is fragrant.
  2. Add sautéed mixture to a blender. Add vinegar and maple syrup.
  3. Blend and slowly add oil until dressing comes together. Chill for service.


  1. In a mixing bowl, combine salad ingredients.
  2. Dress, toss, and serve immediately.
