Pumpkin Bolognese Sauce

  • Oil, vegetable -- 2 Tbsp
  • Ground beef -- 1 lb
  • Ground pork -- 1/2 lb
  • Pumpkin, small dice -- 1/2 cup
  • Celery, small dice -- 1/2 cup
  • Onion, small dice -- 1 cup
  • White wine -- 1 cup
  • Libby's 100% Pure Pumpkin -- 2 cup
  • Minor's Classical Reductions Reduced Chicken Stock -- 2 cup
  • Heavy cream -- 1 cup
  • Parmesan cheese -- 1/4 cup
  • Salt -- 2 Tbsp
Preparation

Heat oil in a large pot, add beef and pork, cook until browned, remove and reserve.

Add diced pumpkin, celery and onion to pan and cook until soft, about 2-3 minutes.

Deglaze with wine, add pumpkin puree and chicken stock and stir to combine.

Add meat back to pan and cook for 30 minutes over low heat.

Add cream, cheese and salt.

Serve with zucchini noodles or cooked pasta.
