Libby's 100% Pure Pumpkin -- 2 cups
Brown sugar -- 1 Tbsp
Cinnamon, ground -- 1 tsp
Salt -- 1/2 tsp
Minor's Ancho Flavor Concentrate -- 1 Tbsp
Butter, soft -- 1/4 cup
Bread, sour dough, sliced thick -- 16 ea
Cheese, swiss, sliced -- 16 ea
In a small bowl, stir together, pumpkin, brown sugar, cinnamon, salt and Ancho Flavor Concentrate.
Prep for 1 sandwich - Butter one side of each piece of bread. Add buttered side down of one piece of bread to a preheated skillet, over medium heat. Place one slice of cheese and spread ¼ - ½ cup of pumpkin mixture over bread, top with other slice of cheese. Top with another slice of bread, buttered side up.
Cook sandwich over medium heat for about 5 minutes per side or until golden brown and cheese is melted.
Cut and serve.
Add ½ cup of chopped roasted walnuts or pumpkin seeds.
