- In a small bowl, stir together, pumpkin, brown sugar, cinnamon, salt and Ancho Flavor Concentrate.
- Prep for 1 sandwich - Butter one side of each piece of bread. Add buttered side down of one piece of bread to a preheated skillet, over medium heat. Place one slice of cheese and spread ¼ - ½ cup of pumpkin mixture over bread, top with other slice of cheese. Top with another slice of bread, buttered side up.
- Cook sandwich over medium heat for about 5 minutes per side or until golden brown and cheese is melted.
- Cut and serve.
Add ½ cup of chopped roasted walnuts or pumpkin seeds.
