Pumpkin N’ Brew Soup

Ingredients

Butter, unsalted -- 2 oz

Yellow onion, minced -- 1 ea

Celery, small dice -- 4 stalks

Red pepper, small dice -- 2 ea

Garlic, minced -- 6 cloves

Ginger, minced -- 1 Tbsp

Cumin, toasted -- 1/2 tsp

Beer, dark -- 12 oz
-
LIBBY’S® Pumpkin Puree -- 2 cups

Chicken stock -- 4 cups

Cheddar cheese -- 4 cups

Heavy cream -- 1 cup

Bacon lardons, large dice -- garnish

Pumpkin seeds, toasted -- garnish

Salt and pepper -- to taste
Preparation

1Sweat the onions, celery, red pepper, garlic, ginger, and cumin in butter.

2Deglaze with beer and reduce to a syrup.

3Add puree and stir until hot.

4Add stock and blend in a blender until desired consistency is reached. Return to stove on medium heat.

5Mound in cheddar cheese and heavy cream.

6Adjust seasoning, garnish, and serve.
