An earthy and slightly sweeter take on a hearty classic. Whip up this cozy soup and impress your guests with the depth of flavor that LIBBY’S® Pumpkin Puree adds.

Ingredients
  • Butter, unsalted -- 2 oz
  • Yellow onion, minced -- 1 ea
  • Celery, small dice -- 4 stalks
  • Red pepper, small dice -- 2 ea
  • Garlic, minced -- 6 cloves
  • Ginger, minced -- 1 Tbsp
  • Cumin, toasted -- 1/2 tsp
  • Beer, dark -- 12 oz
  • LIBBY’S® Pumpkin Puree -- 2 cups
  • Chicken stock -- 4 cups
  • Cheddar cheese -- 4 cups
  • Heavy cream -- 1 cup
  • Bacon lardons, large dice -- garnish
  • Pumpkin seeds, toasted -- garnish
  • Salt and pepper -- to taste

    Sweat the onions, celery, red pepper, garlic, ginger, and cumin in butter.

    Deglaze with beer and reduce to a syrup.

    Add puree and stir until hot.

    Add stock and blend in a blender until desired consistency is reached. Return to stove on medium heat.

    Mound in cheddar cheese and heavy cream.
