Red Curry Pumpkin Sauce

  • Oil, vegetable -- 2 Tbsp.
  • Onion, small diced -- 1/2 cup
  • Garlic, chopped -- 1 Tbsp.
  • Cumin, ground -- 1 tsp.
  • Coriander, ground -- 1 tsp.
  • Red pepper, flakes -- 1/4 tsp.
  • Red curry paste -- 2 Tbsp.
  • Libby's 100% Pure Pumpkin -- 1 cup
  • Milk, coconut, unsweetened --1 can
  • Lime juice, fresh -- 2 Tbsp.
Preparation

In a saucepot, heat oil over medium heat, add onions, garlic, cumin, coriander and red pepper. Cook 3-4 minutes until onions are tender. Stir in curry paste, continue to cook 1 minute.

Add pumpkin, coconut milk and lime juice, stir to combine.

Reduce heat to low. Simmer sauce 4-5 minutes until thickened.
Serving Suggestions

Add 1 Tbsp. fresh chopped cilantro.
