Red Curry Pumpkin Sauce

Oil, vegetable2 Tbsp
Onion, small diced1/2 cup
Garlic, chopped1 Tbsp
Cumin, ground1 tsp
Coriander, ground1 tsp
Red pepper, flakes1/4 tsp
Red curry paste2 Tbsp
Libby's 100% Pure Pumpkin1 cup
Milk, coconut, unsweetened1 can
Lime juice, fresh2 Tbsp



  1. In a saucepot, heat oil over medium heat, add onions, garlic, cumin, coriander and red pepper. Cook 3-4 minutes until onions are tender. Stir in curry paste, continue to cook 1 minute.
  2. Add pumpkin, coconut milk and lime juice, stir to combine.
  3. Reduce heat to low. Simmer sauce 4-5 minutes until thickened.

Serving Suggestions

Add 1 Tbsp fresh chopped cilantro.
