|Cumin, ground||1 tsp|
|Coriander, ground||1 tsp|
|Red pepper, flakes||1/4 tsp|
|Red curry paste||2 Tbsp|
|Libby's 100% Pure Pumpkin||1 cup|
|Milk, coconut, unsweetened||1 can|
|Lime juice, fresh||2 Tbsp|
- In a saucepot, heat oil over medium heat, add onions, garlic, cumin, coriander and red pepper. Cook 3-4 minutes until onions are tender. Stir in curry paste, continue to cook 1 minute.
- Add pumpkin, coconut milk and lime juice, stir to combine.
- Reduce heat to low. Simmer sauce 4-5 minutes until thickened.
Add 1 Tbsp fresh chopped cilantro.
