Oil, vegetable | 2 Tbsp |
Onion, small diced | 1/2 cup |
Garlic, chopped | 1 Tbsp |
Cumin, ground | 1 tsp |
Coriander, ground | 1 tsp |
Red pepper, flakes | 1/4 tsp |
Red curry paste | 2 Tbsp |
Libby's 100% Pure Pumpkin | 1 cup |
Milk, coconut, unsweetened | 1 can |
Lime juice, fresh | 2 Tbsp |
Method
- In a saucepot, heat oil over medium heat, add onions, garlic, cumin, coriander and red pepper. Cook 3-4 minutes until onions are tender. Stir in curry paste, continue to cook 1 minute.
- Add pumpkin, coconut milk and lime juice, stir to combine.
- Reduce heat to low. Simmer sauce 4-5 minutes until thickened.
Serving Suggestions
Add 1 Tbsp fresh chopped cilantro.
