Sweet & Sour Pork Tenderloin

Ingredients
  • Pork loin, cleaned and silver skinned, whole -- 2 lb
  • Vegetable oil -- 2 tbsp
  • Minor's Pork Base Gluten Free 6 x 1 pound -- 1 tbsp
  • Black pepper, cracked -- 2 tsp
  • Vegetable oil -- 2 tbsp
  • Pineapple, fresh, peeled, large dice -- 4 cup
  • Red bell pepper, large dice -- 3 cup
  • Green Bell Pepper, large dice -- 3 cup
  • Red onion, large dice -- 2.5 cup
  • Minor's Sweet Sour Sauce RTU 6 x 2.04 kilograms -- 2 cup

    In a small bowl, mix together oil, Pork Base and pepper until well blended. Divide paste into 2 equal portions. Rub paste into all sides of pork tenderloin to coat well.

    In a large skillet over medium high heat, sear all of the tenderloin until browned. Place on sheet pan and roast in a preheated 350°F convection oven for 15-20 minutes or until desired doneness. Remove from oven and let rest 10 minutes.

    While tenderloin is resting, heat skillet or wok over medium high heat. Add oil, pineapple, peppers and onions; sauté 2-3 minutes until al dente. Add Sweet & Sour Sauce and toss. Remove from heat.

    Cut pork into 1 inch slices and plate on platter. Top with Sweet & Sour vegetable mix.
