Tamarind Rojak

  • Light brown sugar, or Palm sugar, 1 cup -- 5 oz
  • Tamarinds, raw, Concentrate or Pulp, 1/2 cup -- 4 oz
  • Peanuts, all types, raw, roasted and chopped, 1/2 cup -- 2.5 oz
  • Soy sauce, sweet, 4 tbsp. -- 2 fl.oz
  • Maggi Seasoning, 4 tbsp. -- 1.5 fl.oz
  • Fish sauce, 2 tbsp. -- 0.5 fl.oz
  • Jicama, bite size slices, 2 cups -- 14 oz
  • Cucumber, bite size slices, 2 cups -- 9 oz
  • Pineapple, bite size slices, 2 cups -- 9 oz
  • Red bell pepper, bite size slices, 1 cup -- 5 oz
  • Mango, ripe, or Green apples, bite size slices, 1 cup -- 5 oz
Preparation

In a saucepan, combine sugar, tamarind concentrate, peanuts, sweet soy sauce, Maggi Seasoning, and fish sauce to make a dressing. Bring to a boil. Remove from heat and cool to room temperature.

Combine the jicama, cucumber, pineapple, peppers and mangos.

Gently fold in dressing. Mix well and taste. Adjust seasoning by adding Maggi Seasoning and sugar.

Garnish with chopped roasted peanuts and toasted sesame seeds for extra crunch.
