Tater Tot Hotdish

Corn and green beans are covered in delicious CHEF-MATE® Country Sausage Gravy and Monterey jack cheese, topped with tater tots and baked with more cheese on top in a small cast iron skillet.

Ingredients
  • Oil, neutral -- 2 Tbsp
  • Onion, yellow, chopped -- 1 ea
  • Beef, ground -- 1 lb
  • Chef-mate Country Sausage Gravy -- 3 cups
  • Salt -- to taste
  • Pepper -- to taste
  • Corn, frozen, kernels, thawed -- 2 cups
  • Green beans, cut, frozen, thawed -- 2 cups
  • Tater tots, frozen -- 32 oz
  • Parsley, fresh chopped, optional -- 2 Tbsp
Preparation

    Preheat oven to 350°F.

    In a large skillet, heat oil. Once hot, add onion and cook until translucent, 5-7 minutes.

    Add ground beef to skillet with onion. Cook, breaking up with a wooden spoon, until browned, another 5-7 minutes. Stir in gravy and adjust seasoning.

    Place frozen corn and green beans in an even layer in the bottom of a cast iron skillet.

    Pour the sausage gravy mixture on top of the vegetables and spread out to even.

    Top with tater tots in a circular shape, covering the whole surface of the skillet.

    Bake until bubbly and the tater tots are golden, about 45-55 minutes.

    Top with chopped fresh parsley, if desired.
