Thai Shrimp Kebabs

  • Oil, vegetable -- 1 Tbsp
  • Garlic, minced -- 1 Tbsp
  • Ginger, minced -- 1 Tbsp
  • Scallions, sliced -- 1/2 cup
  • Minor’s® Sweet & Sour Sauce RTU -- 1/2 gal
  • Green chile peppers, fire-roasted, diced -- 1/4 cup
  • Lime juice -- 1 Tbsp
  • Soy sauce -- 1 Tbsp
  • Peanut butter -- 1/4 cup
  • Sesame oil -- 1 Tbsp
  • Shrimp, medium, raw -- 5 lb
Preparation

In a sauté pan, heat oil and sauté garlic, ginger, and scallions 4–5 minutes, stirring frequently.

Add sweet & sour sauce, green chiles, lime juice, soy sauce, peanut butter, and sesame oil.

Cook sauce, stirring, until peanut butter is melted and sauce is well-blended. Cool.

Marinate shrimp in 3 cups sauce for 2 hours. Discard marinade.

Thread shrimp onto 6-inch bamboo skewers.

Broil kebabs 5–6 minutes on each side or until shrimp is cooked.

Heat remaining sauce and serve warm with kebabs for dipping.
