Oil, coconut, 1/4 cup2 fl.oz
Jackfruit, canned, syrup pack, drained, cooked, small pieces, 4 cups16 oz
Red onion, sliced, 1/2 cup2 oz
Garlic, minced2 tsp
Ginger, minced2 tsp
Red bell pepper, medium diced, 1/2 cup2.5 oz
Green pea, cooked, 1/2 cup2 oz
Carrot, shredded, 1/4 cup1 oz
Cumin, ground2 g
Turmeric, ground2 g
Long green onion, chopped, 1/4 cup0.5 oz
Maggi Seasoning0.5 fl.oz



  1. Heat coconut oil over high heat. Add jackfruit and cook, stirring only occasionally, until jackfruit is golden brown. Remove and reserve, leaving excess oil in pan.
  2. Use excess oil from jackfruit, or add a tablespoon more if necessary, and sauté onions, garlic, and ginger until aromatic- about 15 seconds.
  3. Add red pepper, peas, carrots, cumin and turmeric. Cook for 1 minute.
  4. Stir in jackfruit and green onions. Season with Maggi Seasoning. Transfer to a serving bowl.

Garnish with sliced jalapeños.
