Young Jackfruit Stir-Fry

  • Oil, coconut, 1/4 cup -- 2 fl.oz
  • Jackfruit, canned, syrup pack, drained, cooked, small pieces, 4 cups -- 16 oz
  • Red onion, sliced, 1/2 cup -- 2 oz
  • Garlic, minced -- 2 tsp
  • Ginger, minced -- 2 tsp
  • Red bell pepper, medium diced, 1/2 cup -- 2.5 oz
  • Green pea, cooked, 1/2 cup -- 2 oz
  • Carrot, shredded, 1/4 cup -- 1 oz
  • Cumin, ground -- 2 g
  • Turmeric, ground -- 2 g
  • Long green onion, chopped, 1/4 cup -- 0.5 oz
  • Maggi Seasoning -- 0.5 fl.oz
Preparation

Heat coconut oil over high heat. Add jackfruit and cook, stirring only occasionally, until jackfruit is golden brown. Remove and reserve, leaving excess oil in pan.

Use excess oil from jackfruit, or add a tablespoon more if necessary, and sauté onions, garlic, and ginger until aromatic- about 15 seconds.

Add red pepper, peas, carrots, cumin and turmeric. Cook for 1 minute.

Stir in jackfruit and green onions. Season with Maggi Seasoning. Transfer to a serving bowl.

Garnish with sliced jalapeños.
