The Menus of Change University Research Collaborative (MCURC) Co-presented by The Culinary Institure of America and Stanford University

The Menus of Change University Research Collaborative (MCURC) is a nationwide network of colleges and universities that leverage campus dining halls as dynamic laboratories for driving behavior change. Our primary focus is to advance pioneering research in the areas of plant-forward diets, food waste reduction, and the underlying factors influencing consumer food choices. Additionally, we collaborate to develop educational resources aimed at accelerating the adoption of the Menus of Change Principles of Healthy, Sustainable Menus throughout the foodservice industry. This collaborative effort is an extension of Menus of Change®: The Business of Healthy, Sustainable, Delicious Food Choices, an innovative initiative launched by The Culinary Institute of America and Harvard T.H. Chan School of Public Health. Menus of Change strives to realize a practical and long-term vision that seamlessly integrates optimal nutrition, public health, environmental stewardship, and social responsibility concerns within both the foodservice industry and the culinary profession. Through our research and collaborative endeavors, we aim to drive positive change and empower stakeholders to make informed decisions for a healthier, more sustainable future.
