Olive oil -- 4 oz
Black pepper, coarse ground -- 2 tsp
Potato, Yukon gold, large dice -- 3 lb
White onion, large dice -- 10 oz
Mushroom, white, quartered -- 12 oz
Garlic, cut in half -- 1.25 oz
Vinegar, balsamic, golden -- 1 oz
Thyme, fresh, chopped -- 2 tsp
Minor's Gluten Free Beef Base made with Natural Ingredients 6 x 1 pound -- 2.75 oz
In a bowl, combine oil, Beef Base, vinegar, pepper and thyme; mix with a wire whip to form paste.
Add potatoes, onions, mushrooms and garlic; toss to coat. Pour mixture onto a sheet pan and spread into an even layer.
Place sheet pan into a preheated 400°F convection oven. Bake for 15 minutes; remove and toss potatoes, return to oven. Continue to bake until golden brown and potatoes are soft in center; about 15 minutes.
