Build-Your-Own Chicken Tacos

Taco Seasoning Mix 
    Chili powder1/4 cup
    Cumin, ground2 tbsp
    Salt2 tsp
    Cornstarch4 tsp
    Paprika1 tbsp
    Coriander, ground2 tsp
    Cayenne pepper1 tsp

Taco Filling

    Vegetable oil, blended2 tbsp
    Chicken breast, cooked4 lb
    Water1-1/2 cups
    Minor's Gluten Free Chicken Base made with Natural Ingredients1 tbsp
Other Ingredients 
    Taco shells, baked, crispy, corn20 each
    Taco Sauce10 oz
    Lettuce, field greens, 3 cups, shredded6 oz
    Cheddar cheese, sharp, shredded8 oz
    Tomatoes, seeded, small diced3/4 cup



  1. Taco seasoning may be made up ahead of time. To prepare, combine chili powder, cumin, salt, cornstarch, paprika, coriander and cayenne pepper in a bowl. Mix with wire whip to combine.
  2. In a skillet, heat oil. Add chicken and sauté 3-4 minutes. Add water, Chicken Base and taco seasoning. Stir to combine until chicken is well coated. Continue to simmer until liquid is absorbed, about 3-4 minutes.
  3. If desired, heat taco shells. To assemble tacos, spoon 3 oz chicken filling into each shell. Top with 1/2 oz taco sauce, 1/4 oz lettuce, 1/4 oz cheese and garnish with tomatoes.

Serve tacos with optional garnishes, such as diced avacados, black beans, pico de gallo and sour cream.
