Chipotle Beef Tacos
Ingredients

Trio® Brown Gravy Mix 8 x 13.37 ounces - 1 1/2 cups

Water -- 12 cups

Chipotle peppers in adobo, puréed -- 3 oz

Beef barbacoa, cooked, shredded -- 15 lb

Corn tortillas, toasted -- 128 ea

Roasted corn, cut from cob -- 8 lb

Cabbage, shredded -- 4 lb
-
Cotija cheese, crumbled -- 8 lb

Cilantro, fresh -- 1 lb

Jalapeño peppers, thin sliced -- 2 lb

Radish, thin sliced -- 2 lb
Preparation

1Prepare brown gravy with water according to package directions. Whisk in adobo pureé.

2Warm shredded beef barbacoa and combine with chipotle gravy, tossing to coat.

3Place 2 oz of chipotle shredded beef mixture on each tortilla. Top with 1 oz. roasted corn, 0.5 oz. shredded cabbage, 0.25 oz. onion, 1 oz. of cotija crumbles, and garnish with cilantro, jalapeno and radish slices as needed.
NOTE:
Avocado, salsa, hot sauce, and crema are all great additions to these tacos.
