Chipotle Beef Tacos

Trio Brown Gravy Mix1 1/2 cups

Chipotle peppers in adobo, puréed3 fl oz
Beef barbacoa, cooked, shredded15 lb
Corn tortillas, toasted128 ea

Roasted corn, cut from cob

Cabbage, shredded

Onions, thinly sliced2 lb

Cotija cheese, crumbled

8 lb

Cilantro, fresh

1 lb

Jalapeño peppers, thinly sliced 

2 lb

Radishes, thinly sliced 

2 lb



  1. Prepare Brown Gravy with water according to package directions. Whisk in adobo pureé.
  2. Warm shredded beef barbacoa and combine with chipotle gravy, tossing to coat.
  3. Place 2 oz of chipotle shredded beef mixture on each tortilla. Top with 1-oz roasted corn, 1/2-oz shredded cabbage, 1/4-oz onion, 1-oz of cotija crumbles, and garnish with cilantro, jalapeños, and radish slices, as needed.  

Note: Avocado, salsa, hot sauce, and crema are all great additions to these tacos.
