Classic Tomato Bisque

  • Margarine, or butter -- 0.75 cup
  • All purpose flour -- 1.3 cup
  • Water, hot -- 3.5 qt
  • Minor's Chicken Base 12 x 1 pound -- 3 oz
  • Tomatoes, canned with juice, small dice -- 14.5 oz
  • Tomato paste -- 1.3 cup
  • Granulated sugar -- 5 tbsp
  • Salt -- 2 tsp
  • Cream, heavy whipping -- 8.5 oz
Preparation

In an 8 qt. sauce pot, melt margarine or butter. Blend in flour. Cook 2-3 minutes, stirring constantly.

Add water, Chicken Base, tomatoes, tomato paste, sugar and salt. Heat to boiling, stirring constantly. Reduce heat and gently boil 2 minutes, stirring occasionally.

Add cream, mixing well. Heat to a gentle boil, stirring frequently.
