Lemon Arugula Pesto

  • Arugula -- 4 cups
  • Pine nuts --1/4 cup
  • Garlic, cloves -- 2 each
  • Parmesan cheese, grated -- 1/2 cup
  • Minor's Gluten Free Vegetable Base made with Natural Ingredients-- 2 tsp.
  • Lemon zest -- 1 tbsp.
  • Lemon juice, fresh -- 3 tbsp.
  • Extra virgin olive oil -- 1 1/4 cup
Preparation

Combine the arugula, pine nuts, garlic, parmesan and vegetable base in a food processer. Process to blend.

Once a coarse paste has formed and with the processer running add lemon juice and zest, and the olive oil. Process until smooth. Season to taste.
