Lemon Arugula Pesto

Arugula4 cups
Pine nut1/4 cup
Garlic, cloves2 ea
Parmesan cheese, grated1/2 cup
Minor's Gluten Free Vegetable Base made with Natural Ingredients2 tsp
Lemon zest1 tbsp
Lemon juice, fresh3 tbsp
Extra virgin olive oil1-1/4 cup



  1. Combine the arugula, pine nuts, garlic, parmesan and vegetable base in a food processer. Process to blend.
  2. Once a coarse paste has formed and with the processer running add lemon juice and zest, and the olive oil. Process until smooth. Season to taste.
