Mindful Chik’n Pot Pie with Sweet Earth® Mindful Chik’n
Indulge in a warm vegan pot pie stuffed with veggies, juicy Sweet Earth® Mindful Chik’n and topped with the flakiest of crusts. It has chopped parsley, chives and white onion too. It doesn’t get any better than that.
Ingredients

Sweet Earth Mindful Chik’n -- 1 lb.

White onion, ¼” dice -- 1 cup

Carrot, ¼” dice -- 1/2 cup

Celery, ¼” dice -- 1/2 cup

All-purpose flour -- 2 Tbsp

Vegetable broth -- 32 oz.

Peas -- 1 1/2 cup

Parsley, minced -- 1 Tbsp.

Chives, minced -- 2 tsp.

Pastry dough -- 2 sheets

Eggs, whisked -- 2 ea
Preparation

1Over medium high heat add oil and chik’n, onions, carrots, and celery. Season with salt and black pepper; stir occasionally for 3-5 minutes until vegetables are aromatic.

2Add flour and mix well until flour coats the ingredients in the pot.

3Add broth and bring to a simmer; cook until liquid has thickened to coat the back of a spoon. Add peas, fresh herbs, and mix.

4Transfer chik’n mixture to a bakeable to-go container. Cover with pastry dough. Brush with egg wash then bake at 375°F until golden brown.
Tip:
The Chik’n can be pre-seared or pre-fried before sautéing to achieve a deeper flavor.
