Minted Brown Gravy with Lamb

Trio Brown Gravy Mix 8 x 13.37 ounces16 oz
Water, boiling128 fl.oz
Mint sprigs, fresh2 oz
Potatoes, cut and roasted12.5 lb
Asparagus spears, trimmed, roasted6.5 lb
Cherry tomatoes, halved, roasted3.25 lb
Lamb shanks, frenched, cooked (braised/roasted)50 ea
Mint, fresh (for garnish)As needed



  1. Prepare brown gravy mix with boiling water according to package directions.
  2. Once gravy is prepared, add mint sprigs and simmer for 10-15 minutes. Strain out mint.
  3. Season roasted vegetables to taste.
  4. For one serving, place 4 oz. of roasted potatoes, 2 oz. of roasted asparagus spears, and 1 oz. of roasted cherry tomatoes on the plate.
  5. Add 1 lamb shank to the plate and sauce with minted brown gravy. Garnish with additional mint leaves to taste,

NOTE: This sauce is great with any cut of lamb: cubed stew meat, ground lamb meatloaf or lamb chops.
