Trio Brown Gravy Mix 8 x 13.37 ounces -- 16 oz
Water, boiling -- 128 fl. oz
Mint sprigs, fresh -- 2 oz
Potatoes, cut and roasted --12.5 lb
Asparagus spears, trimmed, roasted -- 6.5 lb
Cherry tomatoes, halved, roasted -- 3.25 lb
Lamb shanks, frenched, cooked (braised/roasted) -- 50 ea
Mint, fresh (for garnish) -- As needed
Prepare brown gravy mix with boiling water according to package directions.
Once gravy is prepared, add mint sprigs and simmer for 10-15 minutes. Strain out mint.
Season roasted vegetables to taste.
For one serving, place 4 oz. of roasted potatoes, 2 oz. of roasted asparagus spears, and 1 oz. of roasted cherry tomatoes on the plate.
Add 1 lamb shank to the plate and sauce with minted brown gravy. Garnish with additional mint leaves to taste.
This sauce is great with any cut of lamb: cubed stew meat, ground lamb meatloaf or lamb chops.
