Trio Low Sodium Brown Gravy Mix 8 x 16 ounces16 oz
Water, boiling128 fl.oz
Mint, fresh2 oz
Peas, green, fresh8 lb
Radishes32 oz
Turnips, cooked, boiled, drained, with salt32 oz
Butter, unsalted8 oz
Lamb, domestic, leg, whole (shank and sirloin), separable lean and fat, trimmed to 1/8 fat, choice, cooked, roasted12 lb

Method

  1. Prepare Low Sodium Brown Gravy Mix according to package directions.
  2. Once brown gravy is prepared, add mint sprigs and simmer for 10-15 minutes. Strain out mint sprigs.
  3. Toss hot peas, sliced radish, and turnips with the butter cubes. Season to taste.
  4. Once the butter has melted and coated the vegetables, place 1/2 cup of vegetables on the plate.
  5. Add 2 oz. of lamb to the plate and sauce with minted brown gravy.

This sauce is great with any cut of lamb from cubed stew meat, ground lamb meatloaf or lamb chops.
