Ingredients

Red onion, chopped large1 lb
Garlic, chopped, coarse0.25 cup
Mushrooms, chopped large3.5 cup
Parsley, fresh, stemmed2 cup
Olive oil2 tbsp
White bread, dry8 oz
Milk16 fl.oz
Eggs, whole6 each
Black pepper, ground1 tsp
Mustard, dried, powdered2 tsp
Beef, ground, 85% lean, formed into patties5 lb

Method

  1. In food processor, combine onions, garlic, mushrooms and parsley; chop to medium coarse. In olive oil, sauté mixture 4–6 minutes. Chill.
  2. Combine white bread and milk and let soak, approximately 2 hours.
  3. Combine meat with all other ingredients and mix well.
  4. Split meat loaf mixture evenly into baking molds, approximately 2-1/2 lbs per mold.
  5. Bake at 350°F for approximately 45 minutes or until 155°F for minimum 15 seconds in center of product.
  6. MEAT LOAF SANDWICH: Slice cold meat loaf into 1-inch thick slices. Grill or sauté until hot. Build your open-faced sandwich using Ciabatta Bread.
