Sonoran Brown Gravy

  • Butter -- 1 oz
  • Onions, julienne cut -- 8 oz
  • Green bell peppers, julienne cut -- 4 oz
  • Red bell peppers, julienne cut -- 4 oz
  • Button mushrooms, sliced -- 8 oz
  • Tomatoes, canned with juice, diced -- 36 oz
  • Trio® Brown Gravy Mix, prepared, warm -- 78 oz
  • Chipotles in adobo sauce, puréed -- 4 1/4 oz
Preparation

In a pot, melt butter. Add onions, and green and red bell peppers. Sauté 2–3 minutes. Add mushrooms and sauté another 2–3 minutes.

Stir in tomatoes and prepared Brown Gravy. Mix until blended.

Add puréed chipotles; stir to blend. Bring to a simmer.

Serve warm.
