Southwest Sweet Potato Tots
Using sweet potato tots adds a twist to this versatile recipe, which can be menued as an appetizer or bar snack, or as a hearty à la carte side dish.
Chef-mate Basic Cheddar Cheese Sauce --1 1/4 pt
Sweet potato tots, frozen, fried -- 1 gallon
Cilantro, chopped -- 1 tsp.
1Heat cheese sauce in a pot over medium low heat, stirring frequently.
2Pour the sauce over the tots and garnish with cilantro.
Serve with a variety of peppers, cheeses, and/or condiments, such as sliced jalapeño, cotija cheese, cowboy ketchup, etc.
