Stuffed Pepper "Elote"

Transform Stouffer’s® Stuffed Peppers with simple elote-style corn: chili powder, mayo and freshly crumbled Cotija cheese.

Corn kernels

2 Tbsp
Cooking oilas needed

Chili powder

1/2 tsp


1 Tbsp

Cotija cheese

1 tsp

Stouffer’s Stuffed Green Peppers, cooked, hot

1 ea



  1. Quickly sauté corn in oil with chili powder.
  2. In mixing bowl, stir together sautéed corn, mayonnaise, and cotija.
  3. Place Stuffed Pepper and sauce on plate.
  4. Top pepper with corn mixture.

Serving Suggestion/Variation:

Top with additional cotija cheese and garnish with chopped cilantro and lime juice.
