Ultimate Breakfast Burger

Chef-mate Corned Beef Hash -- 2 cups

Eggs, beaten -- 2 ea

Breadcrumbs, unseasoned -- ½ cup

Scallions, fresh, sliced, optional -- 3 ea

Oil, neutral -- 3 Tbsp

BURGER BUILD (For 1 Burger):

Bun, brioche, toasted -- 1 ea

Thousand Island dressing -- 1 ½ Tbsp

Corned Beef Hash patty -- 1 ea

Sauerkraut -- 2 Tbsp

Avocado, fresh, sliced -- ¼ ea

Bacon, cooked -- 2 slices

Egg, cooked, sunny side up -- 1 ea
Preparation

1For the patty: In a large bowl, mix together the corned beef hash, eggs, breadcrumbs, and scallion.

2Scoop into 3 oz patties and flatten slightly. Reserve on sheet pan.

3Heat oil in a large skillet over medium heat.

4Cook patties 5-6 minutes per side, until golden brown. Transfer to paper towel lined plate until ready to serve.

5For the burger build: Spread the Thousand Island on the bottom burger bun. Top with one corned beef hash patty, sauerkraut, sliced avocado, bacon, and a sunny side up egg, and top bun.
