Vietnamese Chicken Wing Sauce and Marinade

Ingredients
  • Maggi Seasoning 6 x 27 fluid ounces, 1/4 cup -- 2 oz
  • Water, 1/4 cup -- 2 oz
  • Fish sauce, 1/4 cup -- 2 oz
  • Garlic, cloves, fresh, 8 each, minced -- 1.5 oz
  • Granulated sugar, 1/2 cup -- 4 oz
  • Chicken wing -- 1 lb

    Thoroughly whisk together Maggi Seasoning, water, fish sauce, garlic and sugar in a bowl.

    Reserve half of the sauce/marinade for reducing later.

    Use the remaining half as a marinade. Marinate chicken 6- 24 hours. Drain wings. Discard excess marinade.

    Cook wings as desired.

    Reduce reserved marinade by 1/3-1/2 to a syrup like consistency.
