Carrot Ginger Soup

  • Olive oil -- 1 tsp
  • Onion, diced -- 1 qt
  • Carrot, peeled, diced -- 7 cup
  • Ginger root, fresh, minced -- 1 tbsp
  • Water -- 2.5 cup
  • Minor’s® Chicken Base Low Sodium (No Added MSG)* Gluten Free 6 x 1 pound -- 2.5 tsp
  • Minor’s Zesty Orange Sauce RTU 4 x 0.5 gallon -- 6 tbsp
  • Milk, semi-skimmed 1.5% - 1.8% -- 9 fl.oz
  • Crackers, whole wheat -- 3.5 oz
Preparation

Heat oil in soup pot, and then add onion, carrot, and ginger. Cook for 7-8 minutes.

Add Water, Chicken Base, Zesty Orange Sauce and skim milk.

Bring to a simmer until all vegetables are cooked through.

Puree in a blender until smooth.

Divide soup between 10 soup bowls and garnish with two crackers each.
