Carrot Ginger Soup
Ingredients

Olive oil -- 1 tsp

Onion, diced -- 1 qt

Carrot, peeled, diced -- 7 cup

Ginger root, fresh, minced -- 1 tbsp

Water -- 2.5 cup

Minor’s® Chicken Base Low Sodium (No Added MSG)* Gluten Free 6 x 1 pound -- 2.5 tsp

Minor’s Zesty Orange Sauce RTU 4 x 0.5 gallon -- 6 tbsp

Milk, semi-skimmed 1.5% - 1.8% -- 9 fl.oz

Crackers, whole wheat -- 3.5 oz
Preparation

1Heat oil in soup pot, and then add onion, carrot, and ginger. Cook for 7-8 minutes.

2Add Water, Chicken Base, Zesty Orange Sauce and skim milk.

3Bring to a simmer until all vegetables are cooked through.

4Puree in a blender until smooth.

5Divide soup between 10 soup bowls and garnish with two crackers each.
