Crab and Avocado Soup

Ingredients
  • Water -- 5 qt
  • Minor's Crab Base (No Added MSG)* Gluten Free 6 x 1 pound -- 5 oz
  • Onion, chopped, lightly sweated -- 8 oz
  • Avocados, cut into chunks -- 5 lb
  • Lime juice, fresh -- 1 cup
  • Minor's Culinary Cream -- 1 lb
  • Sour cream -- 1 lb
  • Maggi Seasoning -- 2 tbsp
  • Tomatoes, medium diced -- 1 lb
  • Parsley, fresh, chopped -- 2 oz
Preparation

    In a 8 qt. container, combine water and Crab Base, mixing well.

    In a food processor, add onions, avocados, lime juice, Culinary Cream, sour cream and cold crab stock. Purée until smooth.

    Add Maggi Seasoning. Blend well. Season to taste.

    Garnish with crab, tomatoes, and chopped parsley. Serve chilled.
