Crab and Avocado Soup

Ingredients

Water 5 qt
Minor's Crab Base (No Added MSG)* Gluten Free 6 x 1 pound 5 oz
Onion, chopped, lightly sweated 8 oz
Avocados, cut into chunks 5 lb
Lime juice, fresh 1 cup
Minor's Culinary Cream 2x5 lb. 1 lb
Sour cream 1 lb
Maggi Seasoning 6x27 fluid ounces 1 tbsp
Maggi Spicy Seasoning 6 x 400 ml 1 tbsp
Tomatoes, medium diced 1 lb
Parsley, fresh, chopped 2 oz

Method

  1. In a 8 qt. container, combine water and Crab Base, mixing well.
  2. In a food processor, add onions, avocados, lime juice, Culinary Cream, sour cream and cold crab stock. Purée until smooth.
  3. Add Maggi Seasoning and Maggi Spicy Seasoning. Blend well. Season to taste.
  4. Garnish with crab, tomatoes, and chopped parsley. Serve chilled.
