Minor‘s® GreenLeaf™ Cilantro Pesto Gluten Free

2 1/2 cup

Lentils, black, cooked

1/2 gal.

Cauliflower, riced, cooked

1 1/2 qt.

Sweet Potato, diced 1/2 inch stir fried

2 1/2 cup

Tomato, cherry, half cut

2 cup

Harissa, prepared

2 1/2 cup

Onion, red, 1/4 inch dice

2 1/2 cup

Pepper, red, 1/4 inch dice

2 1/2 cup

Yogurt, plain

1 1/4 cup

Cilantro, minced with stem

5 Tbsp.

 

Method

  1. In a bowl, mix lentil and cauliflower, then hold.
  2. In a bowl, mix sweet potato, onion, pepper, then hold.
  3. In a bowl, whisk harissa and yogurt until fully incorporated.
  4. Garnish with cilantro, vegetables and pesto on lentils.
  5. Serve lentil bowl cold with cilantro pesto.

Serve with a variety of vegetables and spices. (Example: cilantro, eggplant, etc.)
