  • Minor‘s® GreenLeaf™ Basil Pesto Gluten Free -- 2 1/2 cup
  • Lentils, black, cooked -- 1/2 gal.
  • Cauliflower, riced, cooked -- 1 1/2 qt.
  • Sweet Potato, diced 1/2 inch stir fried -- 2 1/2 cup
  • Tomato, cherry, half cut -- 2 cup
  • Harissa, prepared -- 2 1/2 cup
  • Onion, red, 1/4 inch dice -- 2 1/2 cup
  • Pepper, red, 1/4 inch dice -- 2 1/2 cup
  • Yogurt, plain -- 1 1/4 cup
  • Cilantro, minced with stem -- 5 Tbsp.
Preparation

In a bowl, mix lentil and cauliflower, then hold.

In a bowl, mix sweet potato, onion, pepper, then hold.

In a bowl, whisk harissa and yogurt until fully incorporated.

Garnish with cilantro, vegetables and pesto on lentils.

Serve lentil bowl cold with cilantro pesto.
