Queso Fundido with Plantain Chips with Trio Cheese Sauce
Trio® Cheese Sauce 8 x 32 ounces, prepared, warm -- 74 oz
Chorizo sausage, ground, cooked -- 24 oz
Green bell pepper, fine diced, blanched -- 6 oz
Red bell pepper, fine diced, blanched -- 6 oz
Plantain chips, warm -- 9 lb
1In a large pot, combine prepared Cheese Sauce, chorizo, and green and red peppers. Stir until well blended. Keep warm.
2At service, portion 1/2 cup of Queso Fundido with 6 oz. of plantain chips.
Garnish with pico de gallo, guacamole and/or sour cream.
